Alasanda guggullu ( black eye beans)

This is tasty and healthy dish commonly prepared in Andhra Pradesh. It can be served as evening snacks.


Ingredients:
Alasandulu (black eye beans) – 1 large cup
Onions – 2 
Green chillies – 3 to 4
Curry leaves – few
Oil – 3 to 4 teaspoons

Water – 2 large cups
Salt – 2 to 3 teaspoons
Cumin seeds (jeelakarra) and mustard seeds (aavalu) – a pinch

Procedure:
Take one cup of black eye beans, wash them well. Take one bowl add black eye beans and water 2 cups.(Some people will soak the beans in the overnight and use.) Now boil the beans until they become soft, means can be pressed but they should not be too soft. You can use pressure cooker, in it kept up to 6 whistles. Now drain the water and keep the beans aside.
 
 Cut onions and chilies in to small pieces.
 
 Then take one frying pan add 3 to 4 teaspoons of oil, after it becomes hot add curry leaves, cumin and mustard seeds.
 
Fry them then add chapped onions and chilies.
  
 After frying them add boiled black eye beans and 2 to 3 tablespoons of salt. Mix well cover it and keep in sim for 2 min.
 
 Now the dish is ready to eat.
