Chapattis in triangular shape

Chapattis are very commonly made all over India in different forms. Now let us see how to make chapattis in triangular shape, which is common in South India.

Ingredients :
Wheat flour – ¼ kg
Water – 1 cup
Oil – 3 to 4 teaspoons
Milk – ¼ cup
Procedure :
Take ¼ kg of wheat flour add 1 cup of water, 3 to 4 teaspoons of oil and milk ¼ cup. 
 
Adding milk is optional, by adding milk and oil chapattis will become soft. Now mix all and make a mass and keep aside for at least halt an hour.
 
After half an hour, take that mass and make into small masses depending on how many chapattis you want and what size you want.
 
Now add little oil into each small mass and with both hands press it.
 
 Now take appadala peeta (rolling board) keep the mass on it and press with appadala karra (rolling pin) roundly up to the extent it comes.
 Then add one teaspoon of oil and spread all over, now fold it once now it comes in half-moon shape.
 
Then fold again now it comes in triangular shape.
 
 Now press well till it comes thinly.
 
 Then take one pan add the chapatti on it, add one teaspoon of oil. 
 
Now by turning both sides fry the chapatti. 
 
Now hot hot chapatti is ready.
 
 It can be made without oil also to the people who do not want to take much oil.

Rasam with jaggery

Rasam or charu is  prepared commonly in south India into rice. Making rasam is easy. Here I am giving technique with using jaggery.

Ingredients :


Chana  dal/senaga pappu – 1 cup
Onions -1


Oil – 2 to 3 teaspoons
Salt - 2 teaspoons

Curry leaves – few
Cumin seeds (jeelakarra) &mustard seeds (aavalu) - a pinch
Garlic – 5 to 6 pieces
Turmeric powder - 1 pinch 
water - 1 cup


Rasam powder - 1 teaspoon 
Ripe tamarind fruit - 1small piece  
jaggey - 1 medium size piece





Procedure:
Take chana dal half a cup wash and boil. Now add 1  teaspoon of salt press them well with dall pounder.

 Then add rasam powder 1 teaspoon, one medium sized piece of jaggery, a small piece of riped tamarind fruit and one cup of water and keep aside.



 Cut one onion into pieces and take few garlic pieces, Now take one frying pan add 2 to 3 teaspoons of oil and keep on stove. After oil becomes hot add curry leaves and cumin and mustard seeds. Fry them. Then add pieces of onions and garlic pieces, fry them. Now add the pre prepared mixture into it and boil for 15 min in sim.

Then add into one bowl, now rasam is ready.

Aakukura pappu (dal with green leafy vegetables)

Dal(pappu) is a very common dish made in India especially in Andhrapradesh. People like eat pappu in combination with rice and avakaya. This article is about making pappu with green leafy vegetables without using cooker. Normally used green leafy vegetables are Palakura(spinach), Mentikura(fenugreek plant), leaves of tamarind tree etc.
                                  
Ingredients :
Green leafy vegetables( here palakura and mentikura) – ½  bundle
Kandipappu(red gram dhal) or Chana  dal/senaga pappu – 1 cup
Onions -2
Tomatoes - 2
Green chilies - 5
Oil – 2 to 3 teaspoons
Salt - 2 teaspoons
Coriander leaves - few
Curry leaves – few
Cumin seeds (jeelakarra) &mustard seeds (aavalu) - a pinch
Garlic – 5 to 6 pieces
Turmeric powder - 1 pinch
Water - 2 cups



Procedure :

Take one cup of red gram dhal or chana dhal into one bowl wash and add 2 cups of water, a teaspoon of oil and a pinch of turmeric powder keep for boiling. 
 
Wash the green leafy vegetables, cut into small pieces keep aside. Then take tomatoes, green chillies cut into small pieces.
 
 Then check the  dhal if got boiled, if the dhal is able to be pressed to some extent it is got boiled, in pressure cooker it will take 5 to 6 whistles. Now add the pieces of green leafy vegetables, tomatoes, green chilies, coriander leaves into the bowl. 
 
Now after all of them got boiled takeout the bowl from the stove. Now add 2 teaspoons of salt and press all of them well with pappugutti (dhall pounder) as shown in video. 
 
 Now take one pan add 2 to 3 spoons of oil and heat it.
 
 After it becomes hot add  a pinch of cumin & mustard seeds, curry leaves, onion pieces, garlic pieces and fry them.
 
 After they become fried add this  into the already pressed mixture and mix well.
 
Now the hot hot akukura pappu is  ready.
